Coconut Cloud Smoothie

Had to hop on the Erewhon dupe train, because who wants to spend $18 on a smoothie!?

Plus, look how pretty it is! 😍

Thanks to all the yummy fiber and fats, this dietitian approved smoothie will keep you full for HOURS, guaranteed.


Ingredients

  • 8 fl oz almond milk

  • 1/2 cup 2% Greek yogurt

  • 1 tbsp ground flax seed

  • 1 scoop collagen powder (can sub 1/2-1 scoop vanilla protein powder)

  • 1/2 frozen banana

  • 1/2 cup frozen pineapple

  • 1/4 avocado

  • 1 tbsp nut butter

  • 1/2 tsp blue spirulina

  • 1/4 cup cold coconut cream

Instructions

  1. Blend almond milk, yogurt, flax seed, collagen, frozen fruit, avocado, nut butter, and 1/4 tsp spirulina.

  2. Drop spoonfuls of coconut cream onto the sides of a cup. Dust with 1/4 tsp blue spirulina powder.

  3. Pour smoothie mixture into the decorated cup and top with the remaining coconut cream.

  4. Enjoy!


Nutrition Facts (per smoothie):

Calories: 712 kcal, Protein: 31 g, Carbohydrate: 49 g, Fiber: 11 g, Sugars: 27 g, Sodium: 329 mg

If needed, you can remove the coconut cream from the recipe to reduce the calories by nearly 200 kcals.
