Banana Bread Oats: Baked Oats, But Make It EASY!

If you're craving something sweet, reach for these banana bread 'baked' oats. They take just a few minutes to whip up and are packed with potassium, fiber, and a touch of protein. Enjoy in the morning with breakfast, pre- or post-workout, as an after dinner sweet snack, or whenever, really!‍

Serves: 1

Prep time: 3 minutes

Cook time: 2 minutes, 45 seconds

Ingredients:

  • 1 small banana, 6" or less in length

  • 1 egg

  • 1/4 tsp vanilla extract

  • 1 tsp brown sugar

  • 1/4 tsp baking powder

  • 1/8 tsp salt

  • 1/8 tsp cinnamon

  • dash of nutmeg (optional)

  • 1/2 cup milk of choice, I used unsweetened almond milk

  • 1/2 cup old fashioned rolled oats

Directions:

  1. First, slice the banana in half crosswise. Place in a microwave-safe bowl and mash 1/2 of the banana.

  2. Next, whisk the mashed banana together with the egg and 1/4 tsp vanilla. 

  3. Then, mix in 1 tsp brown sugar, 1/4 tsp baking powder, 1/8 tsp salt, 1/8 tsp cinnamon, and a dash of nutmeg if desired. Mix well.  

  4. Now add 1/2 cup of milk and 1/2 cup of oats. Mix well.

  5. Cook in the microwave for 2 minutes and 45 seconds. 

  6. While the oats are cooking, slice the remaining 1/2 of banana.

  7. Once cooked, top oats with sliced banana, walnuts, and a sprinkle of cinnamon, and enjoy warm.
